Description

Ingredients
1) Mutton - 1 kg 2) Onion(big) - 3 nos 3) Tomato - 2 nos 4) Ginger - 1 piece 5) Garlic pods(small) - 10 nos 6) Green chillies - 4 nos 7) Chilly powder - 1.5 tsp 8) Coriander powder - 3 tsp 9) Turmeric powder - 1.5 tsp 10) Garam masala - 1.5 tsp 11) Bay leaves(Vazhana/Karuga ela) - 3 nos 12) Fennel(Perinjeerakam) - 1 tsp 13) Cloves(Grambu) - 4 nos 14) Cinnamon(Karugapatta) - 2 sticks 15) Curry leaves - A few 16) Salt - As reqd Oil - As reqd
Preparation Method
1) Wash mutton well and cut it into small pieces. 2) Heat oil in a pan. 3) Add fennel, cloves, bay leaves and cinnamon and stir well. 4) When fennel becomes slight brown in color, add sliced onions, green chillies and curry leaves. If u have time, u can use small onions(kunjulli) in place of big ones for better taste. 5) When onions turn golden brown, add ginger-garlic paste. 6) Reduce the flame and saute it. 7) Add chilly powder, coriander powder and turmeric powder and stir for 5 mins on medium flame. If u want the curry to be less spicy, reduce chilly powder to 1 tsp and green chillies to 2 nos. 8) Add tomatoes and salt and mix well for 5 mins. 9) Add the garam masala powder. 10) After 3 mins, add the mutton pieces and stir well. 11) Keep it on medium flame for 10 mins. Do not add water at this stage. 12) Stir occasionally to avoid sticking to the bottom of the pan. 13) Transfer the contents into a pressure cooker. 14) Add 6 cups (teacups) of water and cook on medium flame for 20-25 mins.
